The master uses the local Hattan Nishiki rice for many of his sake. It's not an easy rice to deal with, but they make it with exceptional care. The highligh of their portfolio is without a doubt the umami-bomb omusubi, a sake that harks back to the way rice brews used to taste. A kimoto sake made with wild yeast, it's full bodied, dry and savory. Loaded with all kinds of Umami, flavour, earthiness, mushroomy. store cool, serve chilled.
Pairs with umami dishes, including cheese, very well.
