    In “Koi NISHIKIGOI”, the grade and rice is kept a secret, this is to allow one’s sense of smell and taste to be surprised, appreciating its flavour and aroma without sight and knowledge of it. A traditional and well-layered sake, this Junmai Daiginjo hails from the Niigata prefecture, birthplace of this sake’s namesake, the Koi. Nishikigoi Sake is the product of Imayo Tsukasa Sake Brewery and is a traditional sake that boasts spicy notes of cinnamon and nutmeg, buffered by earthy hints of Parisian mushroom and garlic, giving it a soft, buttery feel while still providing a kick at the end.

    The beauty within is equally matched by the beauty without as the bottle that houses Nishikigoi Sake is artfully crafted by Yamaharu Glass Co. The distinctive red-on-white pattern that mimics the Kohaku variety of Koi has been the recipient of numerous design awards, making each unique bottle a collector’s item.

    Ohmine Sake Brewery was revived in 2010 after a half-century hiatus in order to spread the premium sake “Ohmine” to the world in this land where magnificent nature remains.
    Yamadanishiki, the highest grade sake rice grown with contracted farmers. Water used for brewing is Benten no Yusui, known as the water of the gods. It is characterized by its fragrance, lightness and umami, and sweetness on the palate.

    Pavillon is the second label of our Blend 001. Inspired by the pavillon located adjacent to our kura, it is a blend of  Tanaka’ s handcrafted sakes using the same philosophy and care as our  agship Blend 001.

    Pavillon of Blend 001 is wilder, full-bodied, with a mouth- filling texture in the mouth and  made to be enjoyed younger. It is our “hommage” to the second wine of Bordeaux’s top grand cru.

    DOMINANT AROMA: Mango, almonds milk, buttery

    MOUTHFEEL: Full-bodied, but also rounder, softer and enveloping then the Blend 001.

    LINGERING FLAVORS: Peach, coco milk, anis notes.

    Recommendation pairing with beurre blanc salmon, mushrooms chicken and soft cheeses plate, without forting all Asian style dish.
