In “Koi NISHIKIGOI”, the grade and rice is kept a secret, this is to allow one’s sense of smell and taste to be surprised, appreciating its flavour and aroma without sight and knowledge of it. A traditional and well-layered sake, this Junmai Daiginjo hails from the Niigata prefecture, birthplace of this sake’s namesake, the Koi. Nishikigoi Sake is the product of Imayo Tsukasa Sake Brewery and is a traditional sake that boasts spicy notes of cinnamon and nutmeg, buffered by earthy hints of Parisian mushroom and garlic, giving it a soft, buttery feel while still providing a kick at the end.

The beauty within is equally matched by the beauty without as the bottle that houses Nishikigoi Sake is artfully crafted by Yamaharu Glass Co. The distinctive red-on-white pattern that mimics the Kohaku variety of Koi has been the recipient of numerous design awards, making each unique bottle a collector’s item.

A mellow, sweet pure rice sake that harmonizes the plump umami of rice with soft acidity.

Using the only rice suitable for sake brewing in Nara Prefecture, “Tsukihafu”, we have revived the “five-stage preparation” described in the literature of the Edo period to express a deeper and more profound taste.

It was named Terroir because it was brewed with rice and water produced in Nara prefecture.

*Terroir is a word that expresses all the characteristics surrounding the rice, which is the raw material, such as the location, climate, and soil, and the environment in which sake is produced.

The complex, wide and deep flavor of kimoto brewing can be enjoyed on the rocks or cold with a sharp and clean throat. In the case of room temperature or hot sake, you can enjoy the rich and deep flavor of the rice..

Kimoto preparation, a traditional method. Using K601 yeast “No. 6 yeast” and “white koji” that produces citric acid, it takes about a month to train it into a powerful yeast.
An amazingly low polishing rate of 90%. By slowly fermenting over time, it is finished in a powerful and deep flavored sake.
By using white koji, we are able to balance the five tastes and express a refreshing aftertaste.
As the temperature rises, the umami and sourness spreads, and you can enjoy the fun of changing expressions.

“Rumiko no Sake” has three types of pasteurized junmai (60% rice polishing ratio) with different yeasts, but this one uses the most traditional Kyokai No. 6 yeast (no bubbles = No. 601 yeast), and has a calm taste. Finished with flavor. It is characterized by its thick flavor and strong acidity, and its true value is best served warm. The umami, which has a strong core, blooms when it is warmed. Named by Akira Oze, author of the manga “Natsuko’s Sake”.
Recommend to pair with red meat dishes, miso hot pot, smoked cheese, and other side dishes.
Room temperature to warm is recommended.
