Bottling Date: 1/12/22
“Rumiko no Sake” has three types of pasteurized junmai (60% rice polishing ratio) with different yeasts, but this one uses the most traditional Kyokai No. 6 yeast (no bubbles = No. 601 yeast), and has a calm taste. Finished with flavor. It is characterized by its thick flavor and strong acidity, and its true value is best served warm. The umami, which has a strong core, blooms when it is warmed. Named by Akira Oze, author of the manga “Natsuko’s Sake”.
Recommend to pair with red meat dishes, miso hot pot, smoked cheese, and other side dishes.
Room temperature to warm is recommended.

Origin 愛知 AICHI Alcohol 16% Size 720ml HI-NO-KISHI is sake that allows you to experience a good change in facial expressions over several years. The terroir that can express HI-NO-KISHI is the Monryu district of Kurodasho, Hyogo Prefecture. Even within Kurodasho, this district has ideal conditions such as sunshine, temperature changes, water temperature, and temperature differences.
It is an area that is open to the east and west, has nothing to block the sunlight, and is resistant to heat because it draws water from the mountains. The location in the valley creates a temperature difference, which allows the rice to rest during the night and produces rice that is heavy.
Good to pair with red meat and spices.

Niizawa Junmai Daiginjo 2021 720ml
Origin Miyagi Alcohol 16% Polishing 7% SMV ±0 Size 720ml We launched this premium sake collection in 2015 in collaboration with contemporary artists.
Since its inception we have been honored to work with different Japanese contemporary artists each year.
When rice is highly polished, it becomes extremely difficult to cultivate koji, which makes it difficult to extract the umami derived from koji, but with NIIZAWA, we have succeeded in extracting 2 times the umami than Zankyo Super 7 which also has a 7% rice polishing ratio.
One can experience the sweetness of the rice directly as it lingers on one’s palate so it can be thoroughly enjoyed.
It will age beautifully when stored in a refrigerator.
This sake is the penultimate of the 7% polished rice series, which began with the goal of “producing the best polished rice in the world”. It is limited to 1,000 bottles per year.
Each year we collaborate with a different artist, therefore the label differs each year.[Awards]

Hakkaisan Snow Aged Jdg 3Yrs 17% 720ml (Gb)
This sake was specially prepared for storage in the snow room, which we opened in 2013. It is a pure rice ginjo liquor aged for three years in the exclusive tank of the “Hakaissan Snow Room”. The Uonuma region in Niigata Prefecture is Japan’s leading heavy snowfall area with 2-3 m of snow. It is snow that sometimes becomes a nuisance for living in a snowy country where long and severe winters continue. The ancestors nurture the life and food culture unique to a snowy country utilizing the power of the snow. One of them is the “Snow Room”, which is a “natural refrigerator” created from the wisdom and ideas of people in snowy countries. In the days when there was no refrigerator like today, the “Snow Room” keeps the temperature low throughout the year.
