    Twenty years since the initial brewing process began in 1995, Gengai has aged into a markedly complex and dimensional miracle, with sweet, tart, bitter and umami weaving together in each sip. Gengai is the epitome of vintage sake – a bittersweet reminder that even unthinkable disaster can birth once-in-a-lifetime greatness.

    Mature mellowness meets a graceful aroma

    A deep and alluring amber in color, Gengai entices with a mellow and multilayered aroma and flavors. On the tongue, a graceful sweetness and umami with a pleasing tartness. Sweet, tart, bitter and umami become one with a mature mellowness and clarity of flavor.

    Patience and time yield greatness

    When aged under appropriate conditions, sake undergoes chemical reactions that imbue deeper, more complex flavors and entrancing colors. With long gestation, a vintage can also develop surprising clarity and dignified, regal flavors. These changes cannot be purposefully induced and the exact outcome of the aging process is something only time and nature decide.

    CHOYA Urushi is a true masterpiece among the CHOYA range. Resembling rich flavors of a fine vintage port

    wine, this pure raw material ume fruit liqueur was aged for over 18 years. Smoky flavors with some nuttiness

    and rich fruit, with a slight sensation of sweetness and astringency overlapping each other. Additionally, CHOYA Urushi comes in a custom-blown bottle with a

    traditional Japanese urushi (lacqueur) painting. Made in the Kiso region

    of Nagano which is famous for its urushi ware techniques, each bottle

    is carefully lacquered by hand finally becoming what’s known in

    Japanese traditional art as “nejiri ume” – a twisted ume flower.

    We launched this premium sake collection in 2015 in collaboration with contemporary artists.
    Since its inception we have been honored to work with different Japanese contemporary artists each year.
    When rice is highly polished, it becomes extremely difficult to cultivate koji, which makes it difficult to extract the umami derived from koji, but with NIIZAWA, we have succeeded in extracting 2 times the umami than Zankyo Super 7 which also has a 7% rice polishing ratio.
    One can experience the sweetness of the rice directly as it lingers on one’s palate so it can be thoroughly enjoyed.
    It will age beautifully when stored in a refrigerator.
    This sake is the penultimate of the 7% polished rice series, which began with the goal of “producing the best polished rice in the world”. It is limited to 1,000 bottles per year.
    Each year we collaborate with a different artist, therefore the label differs each year.

    We launched this premium sake in 2015 in collaboration with contemporary artists.
    Since its inception we have been honored to work with different Japanese contemporary artists each year.
    When rice is highly polished, it becomes extremely difficult to cultivate koji, which makes it difficult to extract the umami derived from koji, but with KIZASHI, we succeeded in extracting 1.5 times the umami than Zankyo Super 7 which also has a 7% rice polishing ration.
    We brew KIZASHI so its proportion of residual sugar falls in between that of NIIZAWA and Zankyo Super 7.
    This will age beautifully when stored in a refrigerator.
    It is a precious sake and we only brew 1000 bottles per year.
    Each year we collaborate with a different artist, therefore the label differs each year.

    With Shirin, raw sake rice is polished to 18% for a pronounced clarity of flavor before storage in a mizunara Hokkaido Japanese oak barrel. Hokkaido, known for its pristine natural environs and rural charm, produces these oak barrels that imbue the sake with a forest-like aroma and open the door to a new world of sake.

    A new elegance born of oak

    Shirin promises layers of scent and flavor. The flavor is bold and tart in the mouth, smooth and creamy, with pleasant, smoky notes from oak cask storage, intriguing bitterness and hints of mineral.     Nine-day oak storage brings exquisite aroma

    Stored as raw sake in oak barrels for nine days, Shirin unabashedly takes on woody nuance. A strong oak flavor at three to four days melts into the sake at five or more, bringing flavors that surprise even the brewers themselves.

    HI-NO-KISHI is sake that allows you to experience a good change in facial expressions over several years. The terroir that can express HI-NO-KISHI is the Monryu district of Kurodasho, Hyogo Prefecture. Even within Kurodasho, this district has ideal conditions such as sunshine, temperature changes, water temperature, and temperature differences.
    It is an area that is open to the east and west, has nothing to block the sunlight, and is resistant to heat because it draws water from the mountains. The location in the valley creates a temperature difference, which allows the rice to rest during the night and produces rice that is heavy.
    Good to pair with red meat and spices.

    Maoh Imo Shochu 25% 1800ml

    In Japan, Shochu boom began around 2003. At that time, shipments of shochu exceeds nihonshu the first time in 50 years. Premium shochu appeared at that time. They became fiercely popular and were hardly distributed because the demand exceeded the supply too much. Especially, the market price of the brands which had been really difficult to purchase increased more than 10 times than the normal retail price of about 3,000 yen for 1.8ltr bottle at that time. Those brands were called “Maboroshi no Shochu (or phantom of shochu)” in  premium shochu because they were hardly be distributed in the market. Today, I would like to introduce Top3 premium shochu brands called 3M. “M” stands for Maboroshi(or phantom).  They are all made in Kagoshima prefecture (Southern part of Japan) where it is very famous for Imo (or sweet potato) shochu.

    MAOH IMO SHOCHU 25% 1800ML

    Maoh means Devil in Japanese. It is refreshing and clear, easy to drink with a very fruity taste and slightly sweet flavor unlike tipical Imo shochu. It’s recomended for ladies due to lesser strong Imo taste and easy to consume. If you want to fully enjoy the charm of “Maou Sho-chu” it is recommended to drink on the rocks. You can enjoy the fruity aroma, rich and crisp aftertaste without a strong and distinct sweet potato taste.

    Yumedono is the name that Masumi has been
    crowning the best sake since the Meiji era.

    Carefully selected sake rice is
    brewed with No. 7 in-house yeast.

    An elegant
    and gorgeous scent with aromas of white peaches and bananas with citrus and

    Along with the mild sweetness and the acidity that invites the
    whole taste to a pleasant lingering finish, the gentle and smooth texture with
    a well-defined contour is impressive.
